Therianthropy Bonnie Vivant Chardonnay Pet-Nat '20
This sparkling Chard has an extravagant mousse delivering golden delicious, raw almonds, lemon, quince and candied bananas.
Organically farmed, hand harvested grapes, whole-cluster fermented with natural, wild yeast. Fermented 21 days in concrete egg, then finished in bottle. Unfined, unfiltered, 100% malolactic fermentation.
Therianthropy The Negotiant Pét-Nat '20
This sparkling Cab Franc has wild bramble fruit, red apple-skins and spearmint. Tarragon and salty Dutch liquorice. A great partner for pizza!
Organically farmed, 70% whole cluster, primary fermentation commenced spontaneously in concrete egg. After 15 days on skins, the grapes were pressed and continued fermenting for another 5 days until bottling to finish fermentation. 100% malolactic fermentation completed.
Therianthropy Mouflon Pét-Nat '20
This sparkling Pinot Gris orange wine has a bright nose of grapefruit and blood orange, flint and honey, and a savoury touch of lime and pickle. Great partner of spicy Asian dishes.
Organically farmed, 60% whole cluster, primary fermentation commenced spontaneously in concrete egg. 5 days of cold soaking and a further 10 days on skins, after which the grapes were pressed and bottled after 7 more days of fermentation, completing in the bottle. 100% malolactic fermentation complete.
